The Face Behind the Bacchus Winemaking Club
The first rule of a winemaking club is… tell everyone! Whether you consider yourself an amateur looking for a new hobby or a connoisseur wanting to take a stab at winemaking, Bacchus Winemaking Club is made for any wine. lover. That’s because the Domenico winery’s experienced winemaking team, led by owner and winemaker, Dominick Chirichillo, will guide you through four hands-on sessions. Over the course of a year, you’ll produce your very own wine – right down to the label.
The Process of Winemaking
First, you’ll select your grape varietal and quantity. We give you all the options. For example, you could opt for more traditional wine like Cabernet Sauvignon or Chardonnay. You could also experiment with lesser-known varietals. In addition, we offer our favorite Cal-Italia selections: Barbera, Sagrantino, Nebbiolo, and our estate-grown, Syrah & Primitivo.

So, how much wine to make? While our pricing differs depending on grape varietal and quantity, we offer the option to make a full, half, or quarter barrel.

- Destem & Crush | After you destem and crush your grapes into your private vat, it’s time to initiate primary fermentation.
- Press | Once primary fermentation turns the grape juice into wine, you will then learn how to press, prepare, and fill the barrels.
- Rack | Racking your wine involves siphoning your wine from one barrel to another, removing the sediment in the process.
- Bottle | Come summertime, your work is complete! Now it is time to bottle and add custom labels, which means there is only one thing left to do….
