Inspiration: Lazio’s coastal ingredients, simplicity, and bottarga from Gaeta
Thinly sliced raw scallops dressed in cold-pressed olive oil, lemon zest, and sea salt, topped with shaved bottarga (or cured yolk if bottarga is unavailable) and fennel fronds. Served on a ceramic spoon or shell.  Wine Pairing: CHARDONNAY, 2023 Santa Cruz Mountains

Roasted Duck Crostino with Fig Mostarda & Pecorino Caciocavallo Cheese
